Yes, if you go to Administer / Custom Attributes you can add attributes at the desired level (entitlement, entitlement line, account, etc.)

I wouldn't recommend using too many to keep the UI clean, just use them for the key additional attributes you wish to populate. Further details can be found in the User Guide here:
